Place the cast iron skillet on the stove top and heat over medium high. Once the skillet has warmed up, drop the ground pork sausage into the skillet. Break the sausage up with a wooden spatula. Brown the sausage until no longer pink. Drain most of the grease from the sausage.
Drop the butter into the sausage. Stir until the butter is completely melted.
Add the flour by sprinkling it over the top of the sausage. Stir until the sausage is well coated with the flour and a roux is created. Allow to simmer for around 2 minutes, stirring occasionally.
Slowly pour the milk over the sausage, mixing consistently until a smooth texture is formed, and the mixture comes to a boil and thickens.
Reduce to medium low heat. Simmer for an additional 2-4 minutes, stirring occasionally. Remove the skillet from the heat. The gravy will continue to thicken as it cools.
Season to taste with salt and pepper. Serve the sausage gravy over biscuits or breakfast potatoes and enjoy!
Note: This gravy is meant to be on the thicker side. If it is too thick to your liking, slowly add in more milk until your desired thickness is met.
