Pour water and lemon juice into a medium size sauce pan or pot. As the apple slices are being sliced, place them into the pot.
5 medium-size apples, 2 cups water, 1 teaspoon lemon juice
Add the cinnamon, nutmeg and salt to the pot. Create a cornstarch slurry by mixing the corn starch with a couple of teaspoons of cold water. Pour the cornstarch slurry into the pot. Stir all ingredients together with a wooden spoon until well combined.

Cover the pot with a lid and bring to a boil. Reduce to a medium heat, add the granulated white sugar and brown sugar. Stir with a wooden spoon until the sugar is dissolved.

Add the vanilla extract and simmer for 8-10 minutes.

Pierce an apple slice with a fork to check for tenderness. Once tender, remove the pot from the burner and allow cooling for 5 minutes. The filling will thicken as it cools.
