Tools:

  • A large mixing bowl (for the muffin mix) and a small mixing bowl (for the streusel topping)
  • Measuring cups and spoons
  • Whisk
  • Spatula
  • Cupcake liners
  • Muffin pan with 12 muffin wells
  • Ice-cream scoop with trigger (optional but very helpful)

Baking Instructions:

  • Preheat the oven to 375 °F and line the muffin pan with cupcake liners.
  • Make the muffin batter. Mix the dry ingredients (all-purpose flour, granulated sugar, baking powder, and salt) in a large bowl until well combined.
  • Make a well in the center of the dry ingredients mixture. Add the wet ingredients (butter, egg, and vanilla extract). Mix with a whisk until all the ingredients are well combined and a smooth consistency is formed.
  • Fold in the peaches using a rubber spatula.
  • Scoop the muffin batter evenly between the muffin pan wells. Each muffin pan well should be full with muffin batter.
  • Make the streusel topping. In a small mixing bowl, mix together the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and butter until well combined.
  • Evenly spoon the streusel topping mixture over each of the muffins.
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the muffins to cool for 5 minutes. Serve and enjoy!

Tips & Storing:

Peach streusel muffins are a great recipe for making ahead. Easily store in an airtight container or bag in the refrigerator for up to five days, or in the freezer for a couple of weeks. Simply reheat in the microwave for a minute or two and enjoy!

This recipe can easily be adapted to incorporate many of your other favorite fruits. Replace the peaches with your favorite fruit as desired.
