Lemon squares may be the more popular one of the lemon and lime citrus squares duo, but these lime bars are every bit just as tasty. Over in my neck of The States (Florida) lime is a popular citrus of choice to use in deserts and beverages. With Summer upon us, I decided to bake up a batch of Lazy Lime Squares. A sweet treat fitting for our current season that isn't too heavy or indulgent. I've landed on the name Lazy Lime Squares due to the Summer heat inducing laziness and these squares being the perfect treat to enjoy while lounging around.

How to Make Lazy Lime Squares
Lazy Lime Squares are quite an easy desert to whip up. If anything, they take a bit more patience and time than technique, due to the baking, cooling, baking again, and resting times required. In my opinion, the waiting time just builds the anticipation (and offers more opportunities to be lazy) of when I finally get to enjoy the Lazy Lime Squares, making them all the more enjoyable.
Tools Needed:
Not much is needed to bake a batch of Lazy Lime Squares. All you need is:
- 8'x8' baking pan
- Mixer - A handheld mixer or stand mixer will do the trick
- Mixing bowl
Ingredients:
For the Crust:
- ½ cup of unsalted butter at room temperature.
- 1 cup of all-purpose flour
- ½ cup of powdered sugar
For the Lime Filling:
- ½ cup of lime juice (juice of 4 small limes).
- Zest of two limes
- 3 large eggs at room temperature
- 1 ½ cups of granulated sugar
- ½ cup of all-purpose flour
- Powdered sugar for dusting

Directions:
For the Crust:
- Preheat the oven to 350°F/176°C. Lightly grease an 8"x8" baking pan.
- With a hand mixer or stand mixer, mix the butter, flour and powdered sugar until the dough forms.
- Place the dough in the baking pan. Press and pat the dough down to spread out and cover the entire bottom of the baking pan. I used a spatula to help spread the dough out and then pressed out the remaining areas. Place the baking pan in the freezer for 10 minutes to chill.
- Bake for 12-15 minutes until the crust is a light golden brown. Allow cooling for 5 minutes.
For the Lime Filling:
- While the crust is cooling, mix together the lime juice, lime zest, eggs, granulated sugar, and all-purpose flour on medium speed until well blended.
- Pour the lime curd filling over the crust. Place back into the oven at 350°F/176°C for 25-30 minutes until the filling is almost set and the center jiggles just a bit.
- Remove from the oven and allow the lime squares to cool completely. Cover and place into the refrigerator to set for at least 1 hour.
- Before serving, dust with powdered sugar and cut into squares.

Lazy Lime Squares Tips:
How to make your lazy Lime Squares green: If you follow my recipe, your lime squares will have hints of green from the lime zest. If you want the lime filling to be green as well, just add a bit of green food coloring to the lime filling while mixing all the ingredients together.
Storing and Freezing: I recommend storing the lime squares in the refrigerator in an airtight container for up to a week (if they last that long). The lime squares freeze nicely and can be taken out of the freezer to thaw a few hours before planning to enjoy.
